Rhubarb Compote

Ingredients

Approximately 3 cups fresh rhubarb roughly chopped

1⁄4 cup water

1/8 cup brown sugar

  • Spice Pack: dried california lemon peel, cardamom and cinnamon

Directions

  1. Place all ingredients into a medium sauce pot

  2. Heat to medium-high and stir completely until rhubarb breaks down completely

  3. Remove from heat

  4. Let cool completely

  5. Top ice cream, or yogurt, or crackers with mild goat cheese with rhubarb compote

  6. Enjoy!

Optional Ideas:

Instead of this spice blend, rhubarb compote also tastes delicious with some orange extract or zest and a drop or two of vanilla extract
