With field spinach coming along and lots of fun early spring vegetables, I thought it was a perfect time to share this salad and dressing recipe. It’s wonderful as a high-in-iron side salad, or topping for a sandwich. You can also turn it into a full meal if you add some protein like chickpeas, tofu or grilled chicken.
