One Pan Veggie Roast Dinner (Optional add Sausage)

Ingredients

1-2 pounds peeled and cubed vegetables

1 small onion

1-2 cloves garlic

2-3TBS Olive Oil

Spice Pack (Italian Seasoning, basil, oregano, parsley, rosemary, thyme, marjoram and bay leaves)

Salt and Pepper to taste

OPTIONAL: Cut up sausage of your choice (I used 2 large garlic flavored chicken sausages and it was delicious!)

Directions

  1. Preheat oven to 425 degrees

  2. Dice a small Onion and Mince 1-2 cloves or garlic.

  3. Peel and Cut up veggies of your choice. My favorite combo is sweet potato, regular potatoes, beets, pasrnips and turnips. If you have extra squash you can cut that up to add too!

  4. Prep a baking sheet with cooking spray or olive oil

  5. Spread vegetables, onions and garlic in a single layer on the sheet and drizzle with olive oil and spice pack

  6. Optional: add cut up sausages to the top of your tray

  7. Roast 30 minutes, taking out to flip over the veggies halfway through

  8. Top with salt and pepper and parmesan cheese if you please

  9. ENJOY!

Notes

This recipe is delicious just with the veggies, but it becomes a full, quick, one pan meal if you add some protein. You could probably substitute the sausage with some seasoned tempeh too to keep it vegetarian
