Vegetarian Sweet Potato Taco Filling

Ingredients

2 Sweet Potatoes

1 Tablespoon Olive Oil

Hot pepper flakes (optional for more spice)

Spice Pack (chili pepper, garlic, onion, cumin, paprika, salt, criander, sugar, dried tomato, cayenne, dried lemon peel, cilantro)

Directions

  1. Preheat oven to 425 degrees

  2. Peel and cube sweet potatoes into 1/2 inch cubes

  3. Toss Olive oil, sweet potato cubes, spice pack (and optional red pepper flakes) in a bowl

  4. Evenly spread the cubes into a single layer on a large baking sheet

  5. Roast for 30-40 minutes, removing every 10 minutes to flip the potatoes until they are easily poked with a fork.

  6. Top with cheese or shredded carrots and cabbage or both, salsa if you desire and....

  7. ENJOY!

Notes

I love topping my tacos with some shredded cabbage and carrots this time of year!
