Corn Tomato Salad

Corn Tomato Salad (Cukes too if you want!)

Ingredients

1-2 ears fresh corn

1-2 medium sized tomatoes

1-2 small cucumbers (optional)

Red Wine Vinegar

Salt and Pepper to taste

Directions

  1. With a sharp knife, carefully remove kernals from corn cobs. I find it’s easier if I cut the ear in half first

  2. Dice tomatoes into bite sized cubes

  3. Optional: Dice cucumbers into bite sized cubes

  4. Toss with salt and pepper, then add 1-2 Tablespoons of Red Wine Vinegar

  5. Mix well, cover, and refrigerate until ready to eat

  6. ENJOY!

Notes: This recipe is even tastier with a couple of cucumbers. I admit, I love this recipe with just the vinegar, salt and pepper, but you can also top it with some fresh basil or dill! I included some of my fresh cut basil in the box if you care to try it.
