Easy Summer Pasta

Easy Summer Pasta:

Ingredients:

You’re favorite type of pasta

½ cup Pamersan and/or mozarella cheese

1-2 Large Tomatoes

Fresh Basil

4 TBS Olive Oil

3 cloves garlic

Spice Pack (Dried Basil, Oregano, Parsley, Thyme, Rosemary, Marjoram and Bay Leaves)

Salt and Pepper to taste

Directions

  1. Slice Tomatoes into small chunks

  2. Mince 3 cloves of garlic

  3. In a large, heat-safe bowl, toss cut tomatoes, olive oil, fresh basil, minced garlic and spice pack together with your cheese

  4. Set aside and cook pasta

  5. Strain pasta and while still hot, pour on top of your tomato mixture and stir together

  6. If you need to, you can add a little more olive oil to bring it together.

  7. Salt and Pepper to taste

  8. ENJOY!

Notes: I LOVE this pasta. It’s so quick and easy to put together, and doesn’t require too much standing over a hot stove on a summer evening. I used shredded parmesan cheese, but you can use mozzarella, grated parmesan, or both!

Also, you don’t have to use the spice pack if you don’t want to. It’s Italian seasoning to give a little more flavor, but I have found this recipe tastes great both with and without it.
