Pan Seared Shelling Peas with Fresh Herbs
Ingredients:
1 and ½ cup - 2 cups peas (shelled)
2 cloves garlic, minced
⅛ tsp salt
1 TBS Olive Oil or Butter
Ground Black Pepper to taste
Fresh Oregano and Basil to flavor and garnish
Directions:
Shell the peas: I just split open the pods and with my thumb pop the peas into a bowl. It’s fun, and satisfying! Kids are great helpers for this too if you’re okay with chasing peas all over the kitchen :)
In a medium pan, melt the butter and then add the minced garlic until lightly browned
Pour shelled peas, salt and pepper into the pan
Stir occasionally and cook for 3-5 minutes, peas should still be green when finished but no longer have a “starchy taste” I recommend trying one before cooking, and then taste testing after 3 minutes to see if they’re done.
Remove from heat and top with fresh basil and oregano leaves (I took mine off the stems and then lightly chopped them and sprinkled them on top)

Notes: This is a super quick and easy recipe, the longest part is shelling the peas, but it’s also the most fun. I liked them best cooking in butter. You can also use ANY herbs to flavor this dish. Dill and Chives taste great too!
