Sweet Potato Chocolate Mousse Cake

No Bake 3 Ingredient Sweet Potato Chocolate Cake

Ingredients:

CAKE:

1-2 sweet potatoes (about 2 cups once boiled and mashed)

1 cup semi-sweet chocolate chips

½ cup milk (or plant milk, I used almond milk)

TOPPING:

⅓ cup semi-sweet chocolate chips

3 TBS milk (or plant milk, I used almond milk)

  • optional (1-2 drops vanilla extract)

Directions:

  1. Peel and cut into smaller cubes 1-2 Sweet Potatoes

  2. Boil cubed sweet potatoes for 15-20 minutes until super soft and almost falling apart

  3. Strain and in a medium mixing bowl mash them until mostly smooth

  4. Slowly melt 1 cup chocolate chips in the microwave (I did them 30 seconds at a time for about 1 and ½ minutes and then stirred well to finish melting)

  5. Blend with an immersion blender or standing blender, 2 cups mashed sweet potatoes, melted chocolate chips and ½ cup milk until super smooth (it should look like chocolate mousse)

  6. Spread into a small baking dish trying to get the top as level as possible

  7. For the frosting, melt ⅓ cup chocolate chips, 3 TBS milk and a drop or two of vanilla extract if you like.

  8. Drizzle chocolate mixture over top of your cake

  9. Refrigerate overnight (or until firm) and then serve!
