Sweet Potato Casserole
Sweet Potato Casserole:
Ingredients:
2 Lbs Sweet Potatoes, Mini Marshmallows, 1/2 can of Canned Pineapple, 1 Tablespoon Salted Butter melted, 1/8 cup milk, 1 Tablespoon Brown Sugar, 1 Egg (beaten)
Directions:
Preheat Oven to 350. Bake whole Sweet Potatoes by pricking the skin with a fork 45 minutes-1 hour or until they are soft. Let them cool and then scoop the insides into a large bowl and gently mash. Preheat oven to 375. Add milk, sugar, 1/2 can of canned (or fresh chopped) pineapple strained and one already beaten egg to the bowl. Spread the mixture in an even layer in a casserole dish, top with melted butter. Bake at 375 for 25-30 minutes until top is lightly brown. Remove from oven, top liberally with marshmallows and broil until marshmallows are golden brown (just a minute or two, so keep an eye on them) ENJOY!
