Sweet and Spicy Kabocha Squash
Ingredients
Kabocha Squash 3 Tablespoons brown sugar (plus more for sprinkling) 1 and 1/2 teaspoons soy sauce 1 Tablespoon sesame oil 1/4 teaspoon salt Spice Pack (1/4 tsp cayenne, 1/2 tsp cumin, 1/4 tsp cinnamon, 1/4 tsp nutmeg)
Directions
Preheat oven to 400 degrees Fahrenheit Prep a baking sheet for roasting either with cooking spray, oven-safe parchement paper or a silicone baking liner Cut squash in half, remove seeds and cut into slices about a quarter inch thick Combine all the dry ingredients and toss the squash slices in this until well coated, then add soy sauce and toss well again Spread slices in a single layer on the baking sheet and drizzle them with the oil Bake for 15 minutes, turn over, drizzle with more oil and sprinkle with more brown sugar and bake an additional 10-15 minutes ENJOY!
Notes: If you don’t have sesame oil, coconut, avocado, or olive oil work too.
