Crispy Parsnip Carrot Fritters

Ingredients

½ pound parsnips ½ pound carrots 2 large eggs ¼ cup milk of choice ½ cup flour 1 teaspoon salt Spice Pack (¾ teaspoon garlic powder, ¼ teaspoon ground black pepper) 3-6 Tablespoons olive oil or any neutral oil, plus more as needed Plain Greek yogurt or sour cream for serving

Directions

Peel and grate carrots and parsnips (should be about 4 cups total for the amount in your box) In a large bowl mix grated parsnip and carrot with the eggs and milk Add the flour, salt and spice pack to the bowl and mix together well Heat about 2 Tablespoons of olive oil in a medium skillet over medium heat and fully coat the base of the pan Once the oil is hot put 4 or 5 heaping tablespoons of the mixture into the pan and flatten them cook about 2-3 minutes on each side until golden brown and cripsy Do in batches, adding oil as needed Cool on a rack to keep them crispy (you can also cool them on a plate but they won’t stay as crips) Sprinkle with salt and, top with yogurt or sour cream ENJOY!

Notes:

I LOVED making these. It was a lot of fun and they were delicious with a little greek yogurt. It definitely made a difference putting them on a rack to cool than on a plate. They were perfectly crispy!
