Spiced Roasted Acorn Squash

Ingredients

1 Medium Acorn Squash

1 TBS Olive Oil

Spice Pack (1 tsp paprika, 1 tsp garlic powder, 1 tsp dried oregano)

Salt and Pepper to taste

Optional: Parsley to garnish

Directions

  1. Preheat oven to 350

  2. Rinse and dry off the outer skin of the squash (It’s edible! Just get any of that lingering field dirt off first!)

  3. Slice the squash in half and remove the seeds with a spoon(you can save these to roast if you like!)

  4. Lay the squash cut side down and slice into half moons about ¼ inch thick

  5. Line a baking sheet with oven-safe parchment paper, or lightly oiled with cooking spray

  6. Coat the squash with oil, spices and a dash of salt and pepper (I used a medium bowl and my hands to gently toss the slices together with the oil and spices)

  7. Lay the slices in a single layer on your prepared baking sheet

  8. Roast for 40-50 minutes until the squash is fork tender

  9. Top with parsley flakes if you’d like

  10. ENJOY!

Notes: If you’re having trouble initially cutting your squash you can microwave for a couple of minutes to soften it for easier slicing.

For a sweeter taste, drizzle a little maple syrup over the squash before or after baking.
