Balsamic Roasted Red Onions

Ingredients

4 Medium red onions

3 TBS Balsamic Vinegar

3 TBS Olive Oil

Spice Pack ( ½ tsp fancy salt, ¼ tsp ground pepper)

(Feel free to salt and pepper to taste afterwards too!)

Directions

  1. Preheat oven to 475

  2. Peel Onions but leave the root ends intact

  3. Slice Onions in half lengthwise all the way through the root end (this keeps the layers together) cut each half again (remembering to keep the layers intact) until you have wedges that are a little over an inch thick

  4. Place Onions in a roasting pan and drizzle with balsamic vinegar and olive oil, sprinkle with salt and pepper (spice pack) and toss with your hands until all the slices are well coated with the mixture (you can always add more vinegar if you want them extra flavorful) Spread into a single layer

  5. Cover the pan with foil and bake for 15 minutes until the onions are tender.

  6. Remove the foil and carefully turn the onions over

  7. Return to oven and bake uncovered for 15-20 minutes until the onions are golden-brown

  8. Remove from the oven and

  9. ENJOY!

Notes: These guys are delicious just by themselves, but also top a burger like champs, or pair incredibly well on top of baked fish or grilled chicken!
