Roast Broccoli with Scapes and Red Onion

Ingredients

2 heads of broccoli, separated into florets with the large florets cut in half

2 fresh red onions, cut into wedges

Garlic Scapes cut into ¼ inch rounds

2 – 3 tablespoons extra virgin olive oil

1 teaspoon Kosher salt

1/2 teaspoon freshly ground pepper

Spice Pack (Oregano, Thyme, Parsley, Paprika, Basil)

Directions

  1. Preheat oven to 400 degrees. Spray a cookie sheet with baking spray or thin coat of olive oil.

  2. Mix broccoli, olive oil, salt, pepper, spice pack, onions and garlic scapes in a large mixing bowl, then pour onto the baking sheet. Arrange the broccoli so the cut edges are flat on the baking sheet, this way you’ll get the most caramelization. If you feel like it needs it, sprinkle a little more olive oil on top of the veggies.

  3. Roast for 20-25 minutes, until the broccoli, onions and garlic scapes are nicely browned.

  4. Enjoy!
