Parsnip Apple Oat Bake
Ingredients
1 cup shredded parsnip (about one decent sized parsnip)
2 cups rolled oats (also known as “old fashioned oats”
2 or 3 apples cored and sliced thinly
1 tsp baking powder
¾ tsp salt
Spice Pack (2 tsps cinnamon)
2 cups milk (I used almond milk)
1 egg (beaten separately)
1 TBS butter (melted)
2 tsps vanilla extract
⅓ cup maple syrup or honey
Directions
Preheat oven to 375
Grease a 9x13 baking pan and set aside
Shred parsnips (I just used my cheese grater to great success)
Core and slice apples (As thin as you can, I used 2 apples and wish I had used 3)
Line bottom of baking dish with half of the apple slices
In a large bowl mix spice pack, oats, baking powder, parsnips and salt together well
Evenly spread the oat and parsnip mixture over the top of the apples in your pan.
Mix milk, maple syrup or honey, vanilla extract, melted butter and beaten egg together
Carefully pour the mixture over the top of your oats in the baking dish, tap or shake to evenly disburse the liquid
Arrange your remaining apple slices over the top of your mixture
Bake at 375 for 45 minutes
ENJOY! (I LOVED this with a spoon-full of vanilla yogurt on the side)
Notes:
I don’t have a ⅓ cup measuring cup, so I did 5 and one third ish tablespoons of maple syrup and it’s delicious! cows milk or almond milk work great, I have to assume oat milk would work for this recipe as well.
