Baked Beans

Ingredients

1 Pound Dry Beans

1 Medium Onion Diced

¾ cup ketchup

¾ cup molasses (you can substitute with maple syrup if you prefer)

¾ tsp ground black pepper

3 tsps salt

Spice Pack (1 tsp ground yellow mustard)

Directions

  1. Prep dry beans by soaking in about 1 quart of water with 2 tsps salt overnight (or at least 8 hours) before cooking

  2. Once soaked, drain and then add to a large pot with 2 quarts of water and 1 tsp salt. Cook on medium heat for about 1 hour or until beans are soft all the way through. (you can add more water if needed)

  3. Keeping the cooking liquid aside (I used a large pyrex measuring container to keep mine) drain the beans and then return to the pot.

  4. Preheat oven to 375

  5. Stir together the now cooked beans, the diced onion, molasses, ketchup, spice pack and ¾ tsp black pepper

  6. Pour mixture into a lightly oiled 9x13 inch baking dish

  7. Cover with aluminum foil and cook for about 30 minutes then remove the cover, stir, and cook for another 20-30 minutes

  8. Remove from oven, let sit for 15 minutes, stir, serve and

  9. ENJOY!

Notes

You can also add 1 cup of bacon to this recipe if you desire. I left it out of mine and LOVED it just the way it was.
