Sweet Potato Parsnip Pancakes

Ingredients:

1 spice pack (1/4 tsp cayeene, 1/4 tsp smoked paprika), 2 parsnips, 1 large sweet potato, 1/3 cup flour, 1 tsp baking powder, 1/2 tsp salt, 2 eggs (or best vegan frying alternative) 6-8 Tbsps canola oil or olive oil, or any oil you like

Directions

Peel and grate parsnips and sweet potato (you can use your food processor if you have one). In a large bowl, mix parsnips, sweet potatoes, spice pack, flour, baking powder, salt and eggs together. Heat skillet or frying pan with around 2 Tbs Oil. Scoop 1/4 cupfuls of sweet potato parsnip mixture into heated pan. Cook 4-5 minutes until golden brown, turning once. Dry on paper towel Continue steps with remaining mixture, adding oil as needed. Top with sour cream, or maple syrup, or applesauce or any combination that sings to you. Enjoy!

Make my quick applesauce recipe (microwave 2 apples sliced with the skins for 3 minutes or until soft, add to blender with a pinch of cinnamon and a dash of brown sugar and blend until smooth)

Notes:

Add half of a yellow onion diced to the mixture for even more flavor Sour Cream to top Chopped green onions to garnish Applesauce and/or Maple Syrup to top or dip

Rather not fry? Flour your hands and mold the mixture into same sized balls. Place on lightly oiled baking pan and flatten them into equal discs spacing them a little apart from one another. Put in preheated 400 degree oven and bake for 40-45 minutes or until tops start to crisp
