Spinach Gnudi
Ingredients
12 oz ricotta
12 oz spinach (one big bag)
1 egg
½ cup all purpose flour
1/2 cup lightly packed parmesan cheese
Spice Pack (basil, oregano, garlic powder)
1 dash pepper (to taste)
Directions:
Strain the Ricotta for about an hour to remove excess water (I put a paper towel at the bottom of my strainer and then poured the cheese on top)
Place spinach in a large bowl and pour about 2 cups of boiling water over the leaves and then leave them to wilt for 2-3 minutes.
Drain the spinach and place in a clean dish towel or paper towel. Squeeze out as much water as possible.
Finely chop the spinach.
In a large bowl add the ricotta cheese (pat dry once more to remove the last of the liquid) spinach, egg, flour, parmesan cheese, spice pack and pepper and mix well.
Cover and refrigerate for at least an hour.

7. Once it has rested, prepare a baking sheet with parchment paper sprinkled with flour to put the gnudi on. Get a little bowl with cold water to use for your hands as you work.
8. Take a Tablespoonful of the mixture at a time and with slightly damp hands, roll into a ball and place on the prepared baking sheet. Repeat with all of the mixture, trying to work quickly so you don't get the dough too warm and sticky. Dampen your hands with the water in your bowl as needed.
9. You can chill the prepared gnudi for a couple hours until you need to cook them, or cook straight away.
10. Bring a wide, shallow pan of water to the boil. Add a few gnudi at a time to the water, keeping the water over a high heat so it continues to boil.
11. When the gnudi rise to the top, remove with a slotted spoon to an oiled bowl and repeat, cooking in batches.
12. Serve however you prefer! I loved it with marinara sauce, but also with just a little pan-browned butter. I bet Vodka sauce or Alfredo sauce would be fantastic too!

Notes:
This is a more time consuming recipe than normal, but all of the steps were easy to do! I just did other farm chores in between the steps. I wanted to try something new and I’m so glad I did! Now I’m completely into making my own pastas! They don’t have to look perfect to taste delicious!
