Sweet Potato Apple Muffins with Pecan Crumble
Ingredients
2 cups flour, 3 tsps baking powder, 1 tsp salt, Spice Pack (1 tsp cinnamon, 1/2 tsp ground ginger, pinch of nutmeg, pinch of cloves), 1 cup baked sweet potato mashed, 1/4 cup plain yogurt, 1 egg, 3 TBSPS Vegetable or Coconut Oil, 1/3 cup honey (or maple syrup), 1 cup diced apple Pecan Crumble: 1/4 brown sugar, 1/2 cup chopped pecans, 1 TBS Melted Butter
Directions
Bake and mash a large sweet potato and set aside. (See notes for my cheat code :) Grease the cups of a standard 12 cup muffin tin. Preheat oven to 400 degrees. In a large bowl mix flour, baking powder, salt, and spice pack together. In a separate medium bowl combine 1 cup of the mashed sweet potato, egg, honey, yogurt and oil and beat until smooth. Combine wet and dry ingredients together and then gently fold in the diced apples. In a small bowl make the pecan crumble (I put the brown sugar and chopped pecans in first and then poured the melted butter on top then stirred them together). Fill the muffin tin cups 2/3 full and then sprinkle each muffin with a teaspoon of the pecan crumble. Bake 15-20 minuters or until muffins are golden and spring back when touched. Cool on a wire rack. ENJOY!
Notes:
Fastest way I’ve found to bake sweet potatoes is to microwave on high for 8 minutes and then baking for 30 minutes in a 400 degree oven. This cuts baking time in more than half and works great!
