Roast Apple Salad with Maple Cider Dressing

Ingredients: 2 Apples, Salad Greens (Baby Kale mix and Swiss Chard/Spinach mix included with your share this week.) 1 Tablespoons Olive Oil for apples, 1 Tablespoon Olive Oil for dressing, 1 Tablespoon Maple Syrup, 2 Tablespoons Apple Cider Vinegar, 1/2 teaspoon salt, 1/4 teaspoon pepper, Spice Pack (yellow mustard, garlic powder and chipotle chili powder)

Directions: Preheat oven to 375 degrees Cut Apples into quarters and place onto a foil lined baking sheet. Drizzle with oil and toss to lightly coat the apples in oil Roast the apples until tender, about 20-30 minutes While Apples are cooking, mix dressing ingredients together in a small bowl: vinegar, olive oil, maple syrup, salt, pepper, and spice pack. In a large salad bowl toss your winter greens with the dressing to coat all of the leaves. When plating up your salads top them with the sweet roasted apples ENJOY!

Notes: This is such an easy way to make a winter salad a little more special and a little warmer! I topped mine with the apples when they were still warm and also sprinkled some goat cheese, crushed walnuts and craisins on top. It was delicious!
