Butternut Ribbons Roast
Directions
Preheat Oven to 400 Degrees
Peel the outer skin of the squash and discard
Keep peeling long strips of butternut squash until you have a large pile of butternut ribbons.
In a medium bowl toss butternut ribbons with olive oil and spice pack
Prepare a baking sheet or roasting pan with oven-safe parchment paper or foil
Spread the ribbons of squash evenly and bake for 25-30 minutes stirring half-way through until they are lightly crisped
Add a little more salt and pepper to taste
ENJOY!
Notes:
You can use ANY spices to make this recipe! I love it with the garam masala, but it’s also delicious with smoked paprika and garlic, or sweet with brown sugar, cinnamon, ginger and clove!
1 Butternut Squash
2 TBSP Olive OIl
Spice Pack (Garam Masala: Coriander, Black Pepper, Cumin, Cardamom, Cinnamon)
Salt and pepper to taste
