Butternut Ribbons Roast

Directions

  1. Preheat Oven to 400 Degrees

  2. Peel the outer skin of the squash and discard

  3. Keep peeling long strips of butternut squash until you have a large pile of butternut ribbons.

  4. In a medium bowl toss butternut ribbons with olive oil and spice pack

  5. Prepare a baking sheet or roasting pan with oven-safe parchment paper or foil

  6. Spread the ribbons of squash evenly and bake for 25-30 minutes stirring half-way through until they are lightly crisped

  7. Add a little more salt and pepper to taste

  8. ENJOY!

Notes:

You can use ANY spices to make this recipe! I love it with the garam masala, but it’s also delicious with smoked paprika and garlic, or sweet with brown sugar, cinnamon, ginger and clove!

1 Butternut Squash

2 TBSP Olive OIl

Spice Pack (Garam Masala: Coriander, Black Pepper, Cumin, Cardamom, Cinnamon)

Salt and pepper to taste
